I've used a product 'Kamar Varnish 1312' by Krylon, its a 'non yellowing
protection for oil, acrylic & watercolors paintings'. I've only used it on
Epson canvas material, but I've had no issues with it.

Ann, it only needs to survive for a week hanging for our local county fair.
I don't care if it lasts longer than that. I would use a mat but I like the
flush look of mounting directly to black foam core and leaving a narrow
white border instead. So, any reaction that may occur with a sealer will
most likely not be an issue in such a short time.

You could slip it into a clear archival sleeve of some sort .
My concern is regarding chemical reactions between the coating and the
ink...
which might ultimately
destroy the work or possibly even make some nasty fumes for you to
breathe.
