Careful shopping and an ability to interpret packaging help. Better still,
eschew* packaging altogether and the chances are you'll be eating food
rather than a food product. Prosciutto di Parma is the only cured meat I can
think off that doesn't involve bad things (apart from  killing the pig of
course, but that's a matter of perspective).
