Safari is pretty good; it does eat memory, but i have 16GB; Chrome eats memory too, possibly more (see chrome://memory-redirect )
i use Safari with a Javascript blocker, plus Chrome (for Flash) and i often load pages in my RSS reader (NetNewswire) because it has Javascript turned off
Safari sometimes blocks such that i have to reload all pages, and that sucks; because of my slow DSL, i have to keep the number of tabs in Safari under 60 or so in case i need to reload; Chrome's has a task manager window where i can detect and kill runaway pages
