I try to provide some answers, nice thread anyway :-)
The piler mysql user needs some privileges, to create tables,
insert, select, update and delete from them. If you think that
grant all is too much, you are free to tighten its permissions.
searchd is part of sphinxsearch. I urge you to use the deb package
from http://sphinxsearch.com (or compile it fro source). The
debian/ubuntu shipped version is way too old.
I can't tell you why you ran into problems with the installer. You can
see what happened, only you have clues to fix it. As a last resort look
into the postinstall script, and try to reproduce it manually what it
does. Btw. I assume you ran 'make postinstall' after everything had
been compiled and installed. The postinstall is more like a post
configuration
tool.
Be sure to check piler.conf, and set 'mysqlhost', and 'mysqlport', and
set 'mysqlsocket' to empty value. Thus piler attempts to connect to
a remote sql server. (I encourage you to review etc/example.conf in
teh source tree).
Piler uses a single database (piler). sphinx is not really a database,
rather sphinx provides an sql-like interface, and piler uses it. But
it's not really a (usual) database.
If you think the docs is incomplete, please suggest how to improve it.

it's quite easy to make it "working" in that case but that user can do
too much in that database which it doesn't need.
Yuu migt want to look into the docs again, where is a make postinstall
which sets most settings for you an places the files in the right
places.
I also have to investigate why I don't have a searchd on Ubuntu, I
might miss a package there.

On centos 6, you will need to first preform installs from source of
the
following:
libzip, tre, tnef, catdoc, XLHTML, sphinx
Create a piler user and group with the home set to /var/piler
download the source, extract and run
./configure --localstatedir=/var --enable-starttls
--enable-tcpwrappers
--with-database=mysql
make clean all
make install
U will still need to setup the mysql database, user and import the
sql.
sphinx will need a valid config and initialization.

all components to connect to remote mysql.
It might be easier for you to first use piler with a localhost
mysql
server.
Once its working then try with a remote mysql server.
