I think this is true for unused1 (LastBackupDate and
ModificationNumber) and unused2 (uniqueIDSeed), but not for
SortInfoId, which is directly reserved for the application's use, no?

Yes, I got this wrong.  0x0080 is ExcludeFromHotsync, while 0x0008 is
Backup.  I'll change this.
