i haven't done multiple version installations on centos but did on debian etch. most likely, they can co-exist on the same machine but the newer versions might have a "2" or "5" on their corresponding names (i.e. apache2. php5, mysql5) so you don't need to uninstall the previous version. and as the usual reminder goes, both versions of the same service can't use the same port. :)
