i think a big application is for education.  example - digital library 
system based on open source tools/software.  another is for web-based 
training.

how about for bioinformatics (with applications in agriculture and 
medicine)?  huge genomic databases available now and still growing. 
tools to process this information - (for example, see 
http://bio-mirror.net and http://www.ebioinformatics.com).
