In your case regardless of the distro, choosing an approriate wm is more
important. Windowmaker is a good choice but if you require more features
Xfce4 would suffice. Stay away from pixmap themes if you plan to add a bit
of eyecandy.
Compiling a custom kernel for your machines without modules and configured
specifically to your specs will reduce bloat and speed up booting.
Turning off unused services will help too.
