I think you are asking for too much. The process of doing most tasks will vary quite a bit from one desktop environment to another. The programs that come with a distribution will be vastly different even between related distros. Ubuntu, Kubuntu, Xubuntu, Lubuntu, etc. all will have different applications and different ways of accessing them. The default applications even change from year to year, so a printed reference it likely to be out of date by the time it hits the bookstore shelves, so an online reference is the best bet and even those are likely to have out-of-date instructions. If you can narrow down to a desktop environment and/or a disto, I am sure we can come up with some good suggestions, but a generic, up-to-date, reference is a rather tall order.
