John, I've installed and looked at many pdf viewers. There are three that I regularly use: xpdf, mupdf, acroread, and masterpdfeditor. Each has strengths and weaknesses and is best suited for specific tasks.
As for Calbre, I have it installed, but I think I had to install it myself; it was not part of the default Xubuntu installation.
It comes with Slackware.
If I were doing this I would start with a list of tasks that you are going to support, e.g., read and write e-mail, use a web browser, write a letter, listen to music, and so on. Then I would identify the most common apps that various distros install to do each of the tasks I have identified, and then figure out which distros install all of them.
And that's the thing: the user spends most time on the Web (gmail, facebook, and I don't know what else) and occasonally uses a word processor.
Maybe identify the user you are targeting first. Is this for someone who has never used a computer before, or someone already familiar with Windows or MacOS.
Someone who has superficially used linux since 1998 but doesn't make it a point to learn how to do things because it's always easier to ask for help.
This is a formidable task. It might take me the rest of my life.
Eh, perhaps not. I think what I'll do is add a few SBo packages to that laptop and produce specific panel menus to invoke them. You and Jason gave me some good ideas how to create such a tool myself.
