I use both options: squeezelite for playback within the LMS biosphere,
and Airplay to be able to stream sound (for example from videos)
directly from iOS devices to the Raspi and the amps and speakers
connected to it.

You‘re absolutely right. I believe it‘s an issue with „sound over HDMI“,
because as soon as I change squeezelite settings to „analog“, the Pis
show up as Airplay devices again.
I remembered that there have been issues with PCP, HDMI and Shairport.
With PCP 3.11, relase notes said:
> If you are using Shairport-sync you will need to:
> - Remove then reinstall Shairport-sync.
> - Change Audio output to "Analog audio" then back to "HDMI audio".

This fix doesn‘t seem to work with PCP 3.22 however - will have to ask
in the PCP 3.20 thread...
