So, I used that and got PiCore running on the Pi. I then could configure
it in the Squeezelite settings as you described BUT it wasn’t
recognising the WiFi dongle. 

Now, the dongle came with a disc and it states clearly it works on
Win/Linux etc and there is a specific folder for each. 

If I look in the Linux folder there’s all sorts of files in there - and
it seems a text file which presumably must be copied into the SD card as
well as the PiCore files already on there. 
Unfortunately I don’t have a clue how to get the Linux dongle wireless
driver installed on the SD card and which one/s I need to install: the
instructions are like double Dutch to me! (in fairness I have never
installed anything other than PiCore on a RasPi before). I was using a
mains / Ethernet adaptor before so no dongle needed but it is noisy & a
pain tbh so I want to go wireless with this now. 

So sorry to keep asking for advice on here and thank you for all your
kind help so far - this forum is marvellous. [emoji847]
