Thanks for everyone's feedback. It is in fact possible to do what I was trying to do, just not the way I was doing it... :-)
Rod W-P was good enough to call me and set me straight.
What I was doing was to change the colour space of the *file*. As James pointed out, this will be echoed in both windows.
What you *can* do is to view the second window in your CMYK space, or whatever space, by toggling the Window > Proof colours on and off. This only affects the one window and is useful as an on-the-fly soft proof.
I knew this could be done but couldn't remember how it was achieved. Apologies if I wasn't clear in my original posting but I hope this tip is useful to others.
