The best blacks I've got from the Ultrachrome inks is using Epson's own 'Glossy Paper - Photo Weight' with the photo black cartridge. The black's on the Archival Matte paper with the Matte Black cartridge are no where near as deep, but that is down to the paper surface.
I found some of the info on this site helpful when first setting up my 9600 and trying to choose inks/papers.
Towards the bottom of this page on Photo vs Matte black there's some good info on the max black on various papers:
http://www.inkjetart.com/pro/7600_9600/black_mode.html
And this page gives commentary (and sales pitches) on a very wide variety of papers with UltraChrome inks
http://www.inkjetart.com/2200/media.html
maybe something in there's useful?
