Just remove these related files to the trash but don't empty it yet until the 1160 works without the Gimp driver, the way it worked for me was to install Australian driver, go to printer utilities, click "add printer", (make sure epson is switched on) then select USB from the radio button at top of this new box, then you should see epson usb in the lower selection, click this, then click add.

In your printer list in the utility box you'll see SC Epson 1160 (USB), make sure this is selected and this driver will do all you need.

After successful printing, you could then trash the old Gimp stuff.
