Russell Preston Brown (AKA Dr Brown) has a good tutorial on his site that
uses Adjustment layers in Photoshop to control the colors that are blended
to form a B&W image. Not sure if it's the best way but certainly one that
will give you more subtle control than the Channel Mixer.

If you are up for it, try Image >  Calculations. Problem with that dialog
box is there are so many ways of mixing layer/channel information and
blending and masking and inverting information that you will probably go
stir crazy looking at the plethora of B&W looks that you can create. And
that's just with the same image as the source!
