I had exactly the same issue, using a 1.6 pinto, standard weber carb,
planning for a zetec...

I use the standard mounts, as I was concerned about the sump
clearance.

What I did for IVA was to loose the air filter completely, which is OK
( some might say don't drive far with no filter ), the gap is very
tight, but it will run (assume a power loss) and watch out for heat
from the carb if very close..

My zetec is still on the back burner, so this is where I am at now;

1) Removed 7mm block from manifold to carb connection - replaced with
a home made alimunium sheet - 1.5 mm (small improvement)
2) Added a thick / large washer to one mount to slightly tilt the
engine - both reduced clearance and made the exhaust fit better.

Watch out for heat from the carb if very close...

And after much complaining and persuasion from the wife ---- cut a
hole and put a cheapish but nice looking air filter directly through
the bonnet - it was gut wrenching at first, but frankly I should have
done this at the start.

It runs better and cooler + looks good (so I am told) and I can fill
in the hole later with a mesh anyway.

ALSO - my oil filler / breather was rubbing on the bonnet - I cut this
down a little bit.

So suggestion from me is - if it is very short term, make it work with
lower power. if it is long term, take the hit and get cutting.
