however, is all very well until someone wrecks the vehicle and you are
unable to put it back on the road because the insurance is inadequate! The
value is immaterial to me as a figure, but I wouldn't want to lose the car,
all I'm trying to do is get it adequately covered by insurance.

I find this kind of conversation in a way hard to stomach. Not because of a
bad experience (hopefully I won't) but because I feel, as most owners do,
that these cars are great & should have value to reflect as such. But as
with most things bought & sold they are only worth what people are willing
to pay. There is also a supply & demand situation as well.
Most people when selling, are usually selling a 'project' & is priced & sold
through our favorite internet auction site. Very very few excellent/well
kept examples come up for sale. (seen a saloon go for 2.5k & 2+2 for 3k) So
insurance agreed valuation teams have little to go on.
I think Andy H has an agreed rebuild value (he'll confirm I'm sure) rather
than sale type value.
My approach is to just enjoy the car & not worry about value too much. As
with any hobby you do for enjoyment. You will always spend more than you
