Thanks everyone for the thoughts. Guess for now, am going to keep it as a single with low-ish gearing (39/17). Hoping to eventually increase motor capacity to switch to a 16t (which I have sitting in a box). May eventually try a Dos. But for now, not going to mess with what isn't broken.
