Of course I "could" do it.  But there are a couple of  reasons I wouldn't
unless I was literally forced to:

-I have several bikes that I wouldn't want to part with simply because they
are unique and/or special to me.

-I like to do different sorts of riding and I'd have to give up or
compromise the experience if I only had one bike.  MTB for road riding?
All'rounder for trail riding?  Doable, but less fun.

So, I could.  But I wouldn't...
