Howdy,
If you want to check it out, there's a neat item I've been using called
Hamachi, which greatly simplifies VPNs and, at least in cases like this,
eliminates dynamic ip concerns.

The Mac version isn't really 100% there yet, not having an official GUI
it can be tough for some folks to set up, and the unofficial GUI has
given me trouble. On the Windows side, however, it's great. You see a
list of people in a network, and you can right click on them and copy
their Hamachi address, then paste that into VNC or whatever and connect
to it as though they were on your LAN. Very slick.
