Do you think Max is the best ripping program you can get on the Mac, or
would you recommend one that's better?

I was using EAC, too, before I recently switched to a Mac.  Quality is
paramount for me when it comes to ripping my CDs.  I even measured the
track offset of my CD drive to have it corrected by EAC.

I am now looking for a rip program for the Mac with as least as good
quality as EAC.  Seems you have experience in this area.  Would be
great if you shared more of it.
