Is the server running Windows or Linux?  There have been a lot of
reports of slow interaction between Windows and 'nix file systems
across the network, mostly when SqueezeCenter is running on Windows and
the library is stored on a Linux-based NAS.  

If the server is running Windows you might try doing something like
this from the server next time to avoid pulling all of the files across
the network to work on them.

I just remembered one other way to remove the ID3 tags.  If you
re-encode the files to Flac then they'll be removed.  Any Flac files
that I download (some of which have these ID3 tags) I just
automatically re-encode to Flac, which also gets them to be encoded
using the latest Flac encoder version and compresses them at the
compression level that I always use.  To just remove the ID3 tags,
though, this would almost certainly be slower than using Mp3tag.
