I had the same problem when I upgraded to 7.2. I could still play the AIFF files, but the indexer wouldn't pick up new files. I re-installed an older version I still had floating in my downloads folder.
paulg1979, if you have no luck getting an older version I can probably send you the one I use (if you're on mac?), On the tagging front, I also have no problems using tags with AIFF. I rip my music with itunes, and never had any problems whatsoever until the 7.2 upgrade (although some of the genera tags I used didn't work with a 6.x version of slim server, now I think about it...). I'm using AIFF because I read somewhere it is the format most likely to be compatible in the future that supports tagging.
