Keep an open mind.  In reality you have to train yourself to hear just
like anything else. I may not know the theory behind any of this, but
I've been a musician for 40+ years and I can easily tell the difference
between a flac and an mp3 even on a mp3 player.  Play it on a good
system and the differences are really obvious.  

Do you need to be able to hear the difference to enjoy the music? 
Well, it's like a lot of things.  Once you've tasted better or best,
it's a little hard to go back.  As much as I like my Transporter, if I
want to really hear my music and enjoy the little nuances, then I play
my CD's on my Revox player.  For me there's nothing like it.

I recently took my son out to buy him his first acoustic guitar.  I
played several price range guitars for him and he couldn't hear the
difference if a hundred pound whole note came out and hit him right
between the ears.  That doesn't mean there isn't a difference between
the sound of solid woods or the different types of woods.  Te tightness
of the grain on the top and the type of finish even have an affect on
the sound.  

I wouldn't say believe everything you hear, but I would say don't
discount it until you have really and persoanlly given it a fair trial.
