I agree this is the best strategy.

On VortexBox, if you use the VB FLAC-to-mp3 mirror (based on Robin
Bowes' flac2mp3.pl script), it will update the mirrored mp3 files with
any changes you make to FLAC tags or cover art without redoing the lame
transcoding if the music content has not changed. So you can rerun the
mirror after you make changes to FLAC tags and this operation is
relatively efficient. It does check every FLAC file in your LMS
library, however.

On a VB, if you want to update tags or embedded cover art in mirrored
mp3 files for a single album, you can use the mirror-cd-to-mp3 script
from the command line.
