I've used the Touch along with iTunes to rip, tag and organize my classical CDs.
I found little audible difference between WAV (or lossless) files and 320bps MP3. For various reasons I decided to use MP3 files. That works fine for a symphony with breaks between movements. But for an opera or perhaps a "tone poem" with track markers for various portions, gapless playback is essential. I found that iTune has a gapless flag (or tag). If I playback from iTunes, it works fine! But with SBS and the Touch I get very audible glitches -- not just a moment of silence. Not good at all. I found that using iTunes to rip to ALAC does allow gapless playback with the Touch so that's what I generally do now. Most folks recommend FLAC these days, but means I'd need to use something other than iTunes. Yet another application to learn...
