I jumped on this chain a bit late so I hope I'm not repeating anything.  
Pre1900 
in S is easy if you're going narrow gauge...just look at what Paul Scoles and 
many other Sn3 modellers have done.  

In standard gauge S, the real challenge is motive power.  Short of scratch 
building you'd be looking at finding suitable On3/On30 locomotives to convert. 
 The Bachmann Moguls and Consolidations might work with gauge widening and cab 
alterations.  Many years back Paul Raham made a fine- running 4-4-0 from a NWSL 
Spartan series On3 loco.  I saw it again last month and it's a looker.  

No doubt "TK" if you go the pre 1900 route in S standard gauge, every piece of 
equipment will be an accomplishment.

Pre 1900 modeling in S would be great fun, the older cars were small so you 
could build a lot of layout in a fairly small space. The older equipment is 
very 
easy to scratch build as it is mostly wood and a few simple metal parts. The 
only thing you'd really need to buy is archbar or other older type trucks and 
things like brakewheels and scale chain.
I'm not familiar with the suitable steam loco offerings in S scale but if you 
can find the loco I'd go for it.
A copy of "the american railroad freight car" by John H. White would give you 
enough infomation to build a whole lifetime of models and a great layout....dave
