Like Bill Lane has mentioned some of the BTS engines might fill your
needs. For structures check out Wild West Models. I think they also
have figures including horses but they are pretty much Western items.
I photographed a SN3 layout locally where the modeler had backdated his
prior layout. He used link couplers with scratchbilt rolling stock. He
used a horse drawn wagon, a Chevron Polaris tank model that was
available in gas stations at one time for the basis of several
'vehicles'. One of the wagons is on my layout.
