Haven't deployed rails 2.1.1, but we have all our (<= 2.1) apps on Rails Playground VPS setups. They used to run using lighttpd/fastcgi as the default, but now that Phusion Passenger is out, we are deploying to that, and it's sOOO much easier than lighttpd/fastcgi. It's a pleasure to deploy now. Not sure how they do for large traffic sites, but for small commercial apps, they have been great, especially with the excellent tech support they give us.
