Carrot Cake 2 cups Bisquick Baking Mix 1/2 cup packed brown sugar 1/2 cup chopped nuts 2 teaspoons ground cinnamon 1 teaspoon ground nutmeg 1 1/2 cups shredded carrots 1/3 cup vegetable oil 3 eggs 1/4 cup chopped nuts Cream Cheese Frosting (see below) Heat oven to 350 degrees. Grease and flour square pan, 9x9x2 inches. Beat all ingredients except frosting and 1/4 cup nuts on low speed, scraping bowl constantly, 30 seconds. Beat on medium speed, scraping bowl occasionally, 2 minutes. Pour into pan. Bake until wooden pick inserted in center comes out clean, about 30 minutes. Cool; frost with Cream Cheese Frosting. Sprinkle with nuts. Refrigerate any remaining cake. Carrot Cake 1 cup all-purpose flour 1/2 cup wheat flour 1 teaspoon baking powder 1 teaspoon baking soda 1/2 teaspoon salt 1 teaspoon cinnamon 2/3 cup vegetable oil 1/2 cup brown sugar 1/2 cup granulated sugar 1 1/2 cups grated carrots 1 teaspoon vanilla 2 eggs For Frosting: 1 package (3 ounces) cream cheese 4 tablespoons butter, softened 1 teaspoon vanilla 2 1/2 cups powdered sugar, sifted 1/4 cup chopped walnuts Preheat oven to 350 degrees. Grease and lightly flour a 9 by 5 inch loaf pan. Stir together flours, baking powder, baking soda, salt and cinnamon. Mix well. Add the oil, sugars, grated carrots, vanilla and eggs. Beat for at least 2 minutes at medium speed. Pour batter into prepared loaf pan, smoothing top. Bake for 1 hour, or until cake tests done. Let cake rest a few minutes in pan before turning out on a rack for cooling. For frosting, combine cream cheese, butter and vanilla. Add powdered sugar, stirring until smooth and creamy. Spread on cake. Sprinkle with chopped walnuts. Tips: To simplify shredding or grating the carrots, use your food processor. Add 1/2 cup raisins or chopped walnuts for extra flavor. Best Carrot Cake 4 eggs 1 1/4 cups vegetable oil 2 cups sugar 2 cups all-purpose flour 2 teaspoons baking soda 1/2 teaspoon salt 2 teaspoons ground cinnamon 2 teaspoons baking powder 3 teaspoons vanilla, divided 3 cups grated carrots 2 cups chopped pecans, divided 1 stick butter, softened 1 (8 ounce) package cream cheese, softened 4 cups powdered sugar Preheat oven to 350 degrees. In bowl, beat eggs. Add oil. Gradually add sugar. Add flour, baking soda, salt, cinnamon, baking powder, and 2 teaspoons vanilla, mix. Stir in carrots and 1 cup nuts. Pour into greased and floured 9x13 inch baking pan. Bake for 40 minutes. Remove from pan. Cool on wire rack. In another bowl, combine butter, cream cheese, powdered sugar, and 1 teaspoon vanilla. [CnD] Fried cauliflower
Fried cauliflower let me say I cheat on this one, I let my sighted wife deep fry the cauliflower if I am using the deep fryer. Just can't get the hang of using the deep fryer. One head of cauliflower with the leaves removed but the head intact. Add 1/2 cup of water to a sauce pan that will handle the steam strainer and the cauliflower. Place the cauliflower core side down. Steam it for about 15 minutes, do not over cook or it will turn out to be mush. Pour cold water over the cauliflower to stop the cooking. Now cut off the cauliflower off the core. If the buds are large, cut them in half and some times into three pieces, leaving part of the stem on all pieces. Get out three bowls. break a egg in the first bowl for dipping the buds in. Second bowl 1/2 c of flour with salt and pepper mixed in for taste. Third bowl 1/2 cup of Italian bread crumbs. Beat egg and dip cauliflower than in flour and than bread crumbs. Deep fry until golden brown. It usually take three eggs to dip all of the cauliflower in. I only use one beaten egg at a time. You can also fry the cauliflower in a frying pan with about 1/4 inch of oil, which I do, if my wife isn't home and I feel in the mood for fried cauliflower, but the deep fryer is easier and quicker and I don't have to do it. [CnD] Chicken thighs
Baked Chicken thigh 1/4 cup of lemon juice (fresh squeezed) 2 tablespoons black strap molasses 2 teaspoon Worchester sauce 4 cloves of fresh garlic (chopped fine) Mix well. Tonight I have four skinless/boneless chicken thighs that I placed in a quart size zip lock plastic bag, pouring the above over the chicken to marinate for a hour or more. Placed the chicken in the refrigerator and will turn it over from time to time. Will pre-heat the oven to 375 as cook the sweet potatoes and than put the chicken in a 3/4 hour later. Greased a casserole dish, placing the thighs in a single layer, salt and pepper to taste. Cover and bake for 20 minutes. Than pour the marinade over the chicken and cover and bake until done. 20 to 25 more minutes. Steam some fresh broccoli, make a leafy salad and we will be sitting down to a tasty meal. Sweet salad dressing. 1 c oil 1/2 c vinegar 1/2 cup sugar. (I use 1/4 c sugar and 1 package of stevia) 1 tbs prepared mustard ( I like De john) 1 tbs celery seeds. turn on the blender and let it run a couple minutes. Store in refrigerator in jar with a lid.
