Re: [CnD] Sort of success??? Maybe???

I don't have a meat thermometer, or any cooking thermometer for that matter. I
judge doneness of meat by time, by smell, and by touch. When I cook 4 chicken
legs for an hour at 350 degrees, there is no chance the chicken will be
undercooked even if I don't know what the internal temperature is.

You should not eat undercooked meat or poultry. If the food has not reached the
recommended safe temperature. Keep cooking it until it does. Also check your
thermometer for accuracy, and if it fails the test, discard it and replace it.
Food borne illnesses are serious.

Hey thre,
I don’t check the temp any more on my chicken, I just cook it for at least an
hour in toaster oven at around 350 and sometimes even a bit longer.
I probably overcook it, but I am confident it is done.
Also it is wonderful in crock pot.
After a few hours as previous person said , it just falls off the bone and is
great.
I even made a whole roasting chicken in the oven and it turned out great.
Used some for chicken salad as well.
Good luck,
Rich

Yeah that’s good to know personally I think I’m just going to throw those away
what’s left over and then maybe just stick to other meats that are easier to
make than chicken and maybe do the chicken in the slow cooker or something LOL
and yes I did have some cooking instruction when I was younger and they gave me
a couple of things to use but it’s been a very long time now so I may look into
it at some point I was just really confident about it LOL and then tonight when
I was cooking all of those for like 40 minutes to an hour it was stressful
innocence LOL I would put it in let it cook for a little bit take it out check
the temperature put it back in take it out check the temperature and put it
back in take it out think I did that like seven or eight times before it got to
the temperature of 152° LOL I hated it so I am not sure I’m gonna cook chicken

Re: [CnD] Measuring tips

2020-02-20 Thread diane.fann7--- via Cookinginthedark
Setting up your kitchen with specific locations for things is very valueable
advice. Stores like Walmart, Bed Bath and Beyond, and actual kitchen stores,
depending on what you have in your area, offer small wire shelves and various
trays for organizing stuff, which can be helpful. Just think about what works
for you. You can always change it.

Just a note -- I have two sets of measuring cups, a metal set and a plastic
set, both nested to keep them straight. My metal ones hang on a hook by the
sink so I always know where to find them. (They're next to a set of nested
funnels, also positioned so I can always find them) Setting up your kitchen
with specific locations for things means you won't have to try to find
something, because you'll know where it's supposed to be.

Hard plastic, and there is braille on the Pourfect Cups and a pour spout on

different sized measuring spoons, all with braille on them.

Hi Brennen, from Ron Kolesar.
I'm curious to know the following.
Are the measuring cups made out of heavy hard plastic, or made out of stainless
steel?
I'm thinking of picking up a set of the measuring cups and spoons for myself.
So, many thanks.

Re: [CnD] Sort of success??? Maybe???

2020-02-20 Thread Linda S via Cookinginthedark
Hi Brennan:

You should always cook chicken thighs at least 1 hour at dg350 If you take a
fork and stick it in the chicken, it should pull away from the bone.
And just fyi: You may already know this.
In all of the states there are dept. of rehab and centers or organizations who
have teachers that can maybe come to your house and give you some instruction,
or maybe you would go to the center.
If you are looking for employment, and have a good counselor, they may be
willing to purchase some of the things you need for maintaining your
independence.
Do a search to see what is available in your state. For those of us who are
"older" adults, there are also programs for "individuals who are blind" and if
we are lucky to get a good counselor, we may get some items that are purchased
as well. A part from the Dept. of rehab, some centers are funded through the
state independent living centers which may or may not be able to help depending
on the state.
O.k., there's my nickle!
Some time I'll tell you the story of my worst cooking thing that I ever did
after moving in to my first apartment. It was pretty dumb, and pretty bad!
(smile) I can laugh about it now.

Hi guys so I tried cooking again tonight in my Amazon oven and it was
successful but I had a lot of trouble trying to get it to a good temperature I
made bone in skin still on them chicken thighs and online it said that the safe
internal temperature had to be 165° So I cook them three of them for about 40
45 minutes and I could only get them to 152° I also had a fourth one that I had
to cook by itself because there wasn’t enough room on my pan and I was only
able to get that to about 113° They smelled pretty done to me and my mom said
that they didn’t have to be cooked all the way I just don’t want to get sick
but I ate one of the ones that was at 152° and I was fine so I think those are
OK I’m just worried about the last one that didn’t get cooked all the way to

Re: [CnD] Measuring tips

2020-02-20 Thread Nicole Massey via Cookinginthedark
Just a note -- I have two sets of measuring cups, a metal set and a plastic
set, both nested to keep them straight. My metal ones hang on a hook by the
sink so I always know where to find them. (They're next to a set of nested
funnels, also positioned so I can always find them) Setting up your kitchen
with specific locations for things means you won't have to try to find
something, because you'll know where it's supposed to be.

Are the measuring cups made out of heavy hard plastic, or made out of stainless

I'm thinking of picking up a set of the measuring cups and spoons for myself.

The puff paint works really well, and if someone has a little vision, you
can put a contrasting color on the item you want to mark so it will show up
better. If you are totally blind, well, who cares, just get a bottle of what
ever color puff paint you want to choose.
It's cheaperthan hymarx which again the price is marked up because it made

Re: [CnD] Microwave oven

2020-02-20 Thread Ron Kolesar via Cookinginthedark
I would like to see a microwave oven that was accessible via a braille
template and or voice output that
1. was a nice family size and not a small oven like most adapted microwaves
are.
2. Yes, I too would like to see it at a normal price that the sighted would
get without the adaptive items.

But it sadly comes down to supply and demand once again.
It's sad but what can we do about it?
Just my two cents on the topic.

Another cookbook I highly recommend and it is on Bard, too, Is called When The
Cook Can't Look by Ralph Reed.
He does not recommend blind people use microwave ovens,.
He did not revise the book or change his mind about it, though.
There are easy recipes from stove top to oven in that one.

Oh, another book on Bard I also recommend is Cooking Without Looking by Esther
Knudson Tipps; there are two different audiobooks, Each read by a different
narrator. The one read by the man is read by a blind Person who is reading
from a braille copy. It is an old book, but has useful information In it as
well.

Best,
Marie

I did cook the pork chop tonight, am a well-seasoned cook though not a
beginner. It turned out just fine. I don't know if I would use the mayonnaise
again or not as the agent to stick the bread crumbs onto the meat. I could
still taste the mayonnaise after cooking. Not everybody would though. I would
certainly use it in a pinch or if in a great hurry. It turned out better than I
thought it might, the topping stuck to the meat and crispened on both sides,
even though I didn't turn the meat. The chop did not stick to the pan, which I
did butter ahead of time, the pan was easy enough to wash, and the meat was
cooked through. I cooked it for 30 minutes at 350 degrees using the convection
setting on the talking toaster oven. The chop was a thick center cut boneless
chop, at least 3/4 inch thick. It was cooked in the center.
When you use the talking thermometer, put it in the meat at an angle to get the
most accurate reading. You don't want the tip to exit to the bottom of the pan,
nor to rest on top of the meat, or to touch bones. If you don't get enough of
the tip into the meat, your temperature will register too low. And as for the
pan, I save pie tins when they come without air holes in the bottoms, and if I
run low I purchase a stack of them from the grocery store.
I butter or oil the bottom of the pie tin and just go for it. It saves the
trouble of lining with foil, and the foil doesn't stick to the food that way
either. If my food sticks to the pie tin I don't feel too bad about throwing it
away. When I cook pizza, I put parchment paper on the pizza pan before I put my
crust on the pan. If the crust is made from scratch I either oil the pan very
well, or oil the parchment paper before putting the homemade dough on it. It
saves a lot of cleanup. If it is a pan pizza where you want the oil to work
itself into the crust then you just generously oil the pan as I said and leave
out the parchment paper..

Hello, All.

I am just thinking, I may have gotten the name of that

Stuff wrong. I remember it came in a tube and you can use that semi solid

Material to mark appliances and things where braille labels would be

Too big or not stick too well, and that stuff would

Stay on for ages. My late sighted friend Howard marked his

Microwave for me so I could use it without asking him all the time.

When that microwave went out, he got another one, but by then, I did not

Live in the same building anymore and there was no need to share that

Microwave.

It's different when someone can see. They don't need it unless their sight

I thought it was Hi Marks. Sure wish I had some of that just in case.

the google home app also works to control the pot with your voice through their

The Instant Pot, a Magnificent Obsession

By
 Jeannie Johnson

This would make an excellent Mother's Day present.
Here are some other great Mother's Day gift ideas!

The Instant Pot is one of the latest cooking crazes, and with good reason!

Actually, it is just one of many brands of a small kitchen appliance called a
multicooker, a single product that can perform the jobs of many. The main
function that really has people talking is an old idea made new and improved,
pressure cooking. The Instant Pot has ten built-in safety features so, for
instance, your stew won’t end up on your ceiling! It consists of a base that
houses the electronics, a liner that fits inside the base and holds whatever is
being prepared, and the lid.

Different Models and Accessibility Features

While there are at least 5 different models of Instant Pots, the Lux and Duo
series seem to have the most blind/visually impaired-friendly controls. The Duo
has a better design and more functions. The Duo can be used as a pressure
cooker, slow cooker, rice cooker, steamer, yogurt maker, and to saute and keep
food warm. During food preparation or serving, the lid can conveniently be
placed in a side handle of the base. The Duo is available in
3 qt., 6 qt., and 8 qt. sizes. The push-button controls are both tactile and
audible. The Ultra series has buttons and a dial that may not be so practical
for people with little or no vision. The Smart Wifi series has buttons and can
also be operated through a Wifi-enabled device.
Unfortunately, I have not found the Instant Pot app to be very accessible.

There are two raised lines on the inside of the Instant Pot liner. The top one,
about two thirds full, is the maximum fill line. The other, about half full, is
the fill line for foods that may expand or foam during cooking, such as rice,
dry beans, grains, pasta, etc. Although the Instant Pot remembers your last
used settings, if, like me, you want to independently program your cooker,
pressing and holding in the “cancel” button on the Duo for about 10 seconds
will emit a double beep that means your cooker has returned to the default
settings. This operation is not quite as easy with the Lux series, and doesn’t
seem to be consistent among the different sizes.

The liner is deep, which helps when sautéing, as the splatter is less likely to
reach you. This also makes cleanup easier!

All-in-One Preparation

A great advantage of the Instant Pot is the all-in-one preparation. You can
sauté your meat and vegetables, add your spices and liquids, then uncooked
pasta, rice or beans, for example, cover, let the food cook under pressure…all
in one pot with little fuss. Boil and easily peel a dozen eggs, make a

It is a 3 quart pan.

Hello, everyone!!

When I buy pasta, rice, flour, etc, I transfer them to

Canisters with tight fitting lids to keep bugs out.

I've kept cups in different things, but that makes me

Panic, and think I lost my cups, so I try to keep them

Where I know so I don't end up buying a dozen more sets of

Measuring cups.

Oh, another interesting tip: When you bring home flour,

If you have room in the freezer, shove the bag in and freeze it for

Three days. That will kill off any larvae and yucky bugs that might be

Lurking. I did not know that until I heard it on one of the

Cooking shows I downloaded (Cooking in the Dark, of course!)

Between all the chatter about the recipes and what Dale is doing

During each podcast, he slips in a useful tip we would not have thought

About. You just have to listen closely.

Dale lost his sight in a car accident a few years ago,

So he speaks from experience. He is still cooking without

Sight, and so whenever I listen to any of the

Shows, I watch for tips in addition to the recipe he is

Working on. Having a cookie sheet on the

Counter to catch drips of batter while making pancakes or waffles is

Another tip I picked up from him.

Think about this: We see no weevil!!!

Somewhere somehow, a lady got some of those Bugles snacks, and when

She opened it, it was full of roaches!!! Ugh!!! She had to throw that
away.

for braille labels, so that makes it Still not very user friendly for blind

not in a big old hurry to cook or reheat at a slightly Slower speed.

I agree with Jennifer. There are those of us who Don't have four hundred
dollars for a talking toaster Oven or talking microwave. I did it once for
a talking microwave, It lasted two years, and died. Instead of getting it
repaired, I was advised to buy another one, and I just cannot and will not.
I decided to live without a microwave oven now.
Been doing that two years now, and found other ways to reheat food.
The best deal was the Hamilton Beach Teamo talking microwave, Back in 2006,
which cost $120 and I had one, and it lasted two years.
Why can't things be made to last like they used to In the old days? Then, I
could justify spending that kind of money For a talking one if it could be
repaired and had a lifetime warranty; otherwise, no, not for another two
years, not ever.
A one year warranty is a cheap disappointment.

Re: [CnD] Measuring tips

2020-02-20 Thread Marie Rudys via Cookinginthedark
That is correct; don't pack the flour in; lightly scoop the flour
Into the measuring cup and level off with a straight edged knife or,
In the case of the Pourfect measuring cups from Blind Mice, with the
Leveler provided with the set.

To keep my favorite set of cups and spoons from traveling all over the
Kitchen when stored, I put them in a large otherwise unused loaf pan in my
Silverware drawer, which is wide enough for my silverware tray and
The loaf pan to reside side by side. That is why I buy three pans
sometimes,
So I can use the extra one to corral small utensils which would otherwise be
tangled up with
Too many other things in my drawers.

Hard plastic, and there is braille on the Pourfect
Cups and a pour spout on every one of them,
And there is a no-skid ring on the cups starting with
1/2 to the
2 cup one. There are nine different measuring cups in that set,
And eleven different sized measuring spoons, all with braille on them.

Hi Brennen, from Ron Kolesar.
I'm curious to know the following.
Are the measuring cups made out of heavy hard plastic, or made out of
stainless steel?
I'm thinking of picking up a set of the measuring cups and spoons for
myself.
So, many thanks.

measure out 1/2 cup
I have measuring cups that I bought at the blind mice megamall with braille
on them that tells me what each measurement is but how does everyone fill
the cup without making it run over and spill everywhere Any help and tips

The non talking ones are not expensive, but the touch pads Are rather small
for braille labels, so that makes it Still not very user friendly for blind

not in a big old hurry to cook or reheat at a slightly Slower speed.

Legislation is in Congress for this now and it also covers durable medical

Manufacturers need to have accessibility installed as standard for all
equipment and that would cut the costs even further.

Hi everyone thank you so much for the cooking tips I don’t know that I’ll be
doing a lot we’re all need to measure things but you never know so I’ll have to
try to remember some of these tips and I don’t need to be proper either LOL so
I really like the idea of putting the cup into the container or whatever of
whatever I’m trying to measure and then just kind of pushing the stuff into it
with my hand and making sure that it’s level so that it doesn’t fall out
Also to ron it was a plastic set of measuring cups that were on blind mice
megamall so I’m sure if you search braille measuring cups on their website you
would find them but I will warn you the braille on those is not very clear at
least in my opinion so just be aware of that

Another idea to add to this is put what ever you are making or measuring on
a tray or cookie sheet.
This way all you need to do is clean the tray.

I don't know if there is such thing as absolute "proper" in this case.
People do what works best for them, and whatever helps in completing the
task is considered the proper way. I would rather place the measuring cup
into the bag or canister of flour, and fill it by either using the cup as a
scoop, or by holding the cup with one hand and using the free hand to fill
the cup. Less mess that way.

I agree and I know there is a bill going on right now that the NFB started
for making technology accessible.

Legislation is in Congress for this now and it also covers durable medical
devices but this is the wrong administration for it so maybe after an
election or two the nfb and/or acb may get it passed through.
Manufacturers need to have accessibility installed as standard for all
equipment and that would cut the costs even further.
