Actually, the third choice is the best one. Unless it is a 3 way switch, all you need to do is break the black wire. What usually happens is the line is run from a power source, be it an outlet or a breaker box or any number of other options. Then the line runs through the switch box and on

Choice two is the more common. You bring power to the junction box in the ceiling and break the black which runs down to the switch then comes back white. If it is double switched then it comes back white but the reds are joined in the junction box to form an alternate path. It is not against
