She tried it with a metal Bunt pan and she had to throw even the pan away because the dough was baked on. I lent her my silicone Bunt pan and the dessert turned out perfectly and didn't stick at all. You can find silicone loaf pans at Amazon and probably most brick and mortar stores. It's reasonably priced and works great in the oven or a microwave. I have also used silicone pans, and did not grease them. I have had good experiences with silicone bakeware. You were able to peel the sides back a little bit to help get your cake, etc., out. Of course, you grease it. Marilyn, to be completely honest, I believe it was you who posted this recipe originally, but I will write out the recipe. I do not have non-stick aluminum foil—in fact, I didn’t know there was such! I can see where aluminum foil would be better as a liner; parchment paper seemed too bulky and not easy to line a 9x5 loaf pan. Recipe follows: Snickerdoodle bread 2-1/2 cups flour 2 tsp baking powder 1/2 tsp salt 2 tsp cinnamon 1 cup butter softened 2 cups sugar 3 eggs 2 tsp vanilla extract 1 cup sour cream 1 pkg Hershey’s cinnamon chips (purchased from Amazon) 2 tbsp flour Topping—2 tbsp sugar 2 tsp cinnamon In small bowl combine topping ingredients and set aside. Cream butter, sugar, salt and cinnamon until blended, about 2 minutes. (I use a Kitchen Aid stand mixer.) Add eggs one at a time. Add sour cream and vanilla extract. Add flour and baking powder. Coat cinnamon chips with 2 tbsp flour and add to batter. Prepare two 9x5 loaf pans with Pam baking spray and/or butter. Spoon batter into loaf pans; fill about 2/3 full. Sprinkle topping on each loaf. Bake at 350 degrees for 60-70 minutes or until toothpick inserted comes out clean. (This was difficult to do; batter when baked tends to be soft—from Sharon based on my having made this recipe three times.) As I have noted previously, the first time though the loaves stuck a little, it was not bad. The second and third times they stuck very badly and the bread fell apart. The third time I eliminated the cinnamon chips which did not solve the problem, and they add considerably to the recipe. I have sent the recipe to my baking friend Nancy who will most likely try it and give me a full report. Could I have the recipe for the Snicker Doodle Bread? I would also try using a foil-lined loaf pan and spray it with the Pam Cooking Spray that has the flour in it. Even lining the pan with regular aluminum foil and buttering and pamming that might help because you could hopefully peel off the foil without breaking up the bread. I made it last night and it is great! Since the corners stuck, one on each loaf (I used the regular sized loaf pans), I did have a chance to sample; I made it for my grandchildren and daughter-in-law-my son isn't much of a sweets eater. The cinnamon chips may not be easy to find, but using them is worth it. Since there were 4 10 ounce bags in the item I purchased, I'll be making again, but it is well worth doing. The loaves did stick a little in the corner even though I thought I greased the pans well; maybe I'll try putting parchment paper in the pans next time. Thanks so much for the recipe, Marilyn. Snickerdoodle Bread 2 1/2 c. all purpose flour 2 tsp. baking powder 1/2 tsp. salt 2 tsp. cinnamon 1 cup butter, softened 2 c. sugar 3 eggs 2 tsp. vanilla 1 cup sour cream 1 1/2 cup cinnamon chips (1 pkg. Hersheys) 2 TBS. flour Topping: 2 TBS. sugar 2 tsp. cinnamon Combined 2 1/2 cups flour and baking powder in a bowl. In a separate bowl, cream butter and 2 c. sugar, salt and cinnamon until fluffy, about two minutes. Add eggs one at a time mixing well after each addition. Add vanilla and sour cream and mix to combined. Add flour mixture stirring until just combined. Coat the cinnamon chips with 2 TBS of . flour and stir into batter. Spoon batter into four/five greased mini loaf pans (5 3/4 x 3 1/4 x 2 1/4. Dont fill more than 2/3 full.) Combined 2 TBS. sugar and 2 tsp. cinnamon and sprinkle over the top of batter in the pans. Bake at 350º for 35 to 40 minutes until a toothpick inserted into a crack in the center of the loaf comes clean. Remove from oven and let cool 5 minutes before removing from pan. Note: You can also make this in two 9 by 5 loaf pans. Bake at 350º for 60 to 70 minutes until a toothpick inserted into a crack in the center of the loaf comes Clean.
