with most recording software that I know of, the only option is to use a
second sound card or external device (USB headphones) to allow you to
isolate/listen to jaws separately.
that's the only thing I know of that will completely isolate jaws and what
your recording on the systems sound card.

and then press letter s. When complete recording, do the same to turn speech

You have to hit the r separately from the insert-space combination. This is
what is referred to as a dual-layered keystroke.
So the sequence is insert-space then after you let that key chord up, press
