delimiters, it never lets me choose the second delimiter:
upon choosing one bracket, either left or right, the dialog

Not currently possible. It has been discussed here as a possible
future feature.
OK. But you can have a look if you can switch on your OS to the US
international keyboard layout:

Then the right Alt key is redefined to be the AltGr key and then you can
access many more characters directly.

Has anyone had trouble getting a powerdot doc to create a landscape .pdf?
I just upgraded to 1.6.1 and re-installed everything (miktex, gv, gs,
jabref,etc) but now my powerdot .lyx files display portrait instead of
landscape in the .pdf output. using ps2pdf to generate it.
