To summarize:
There is no option to negative in my PDF Writer. PDF995 doesn't have a
negative feature either. Terry Creer's method of changing color in the
print preview is starting to work though I haven't got the exact formula
yet.
I also downloaded a ZAN printer driver which will capture
use CamTastic

when you setup to output the gerbers the option to invert the outputs is
there just check the box

Copper, Mechanical fill.
Unfortunately, there is no 'simple' way to do this, but my way works.
