Years ago shimano made a chrome moly chain that I used to use on my tandem.
This was a six speed rear.
The chains outlasted any others by a fair margin.
Is there anything available today in 6-7-8 speed ilk that is comparable in
quality?

As a data point the strut leg end meets my forks on my Bleriot at about the 11
1/2 cm, as measured straight down the side of the fork blade from the top edge
of the fork crown lug.
And that is with the rack set as low as possible with the tang bent as low as
possible over the break calipers.
Close, but knowing what my perfect bike frame is, with a 100 or 110mm stem
is, the Bleriot would have me too stretched out as well.

If you're encountering a "hard stop" about halfway through the lever
travel, it sounds like you did assemble the shifter wrong, specifically the
chrome "castle" spacer between the pod and the lever.

enough cable pull for triples.
1) The cable pull may be limited by the limit screws on the front
derailleur.
2) It may be that you tensioned the FD cable while the shifter was not in
the full-down position.
