[RBW] Re: The Atlantic article about cycling in the south

2014-03-08 Thread ascpgh

To me, I take all statistics with a grain of salt . Every bit of
tests/data is based upon a certain set of subjective parameters , which in
turn fullfill themselves objectively. All Subjective truth fulfills itself
objectively.

Reminds me of the quote by Aaron Levenstein: “Statistics are like bikinis.
What they reveal is suggestive, but what they conceal is vital.”

As one who spectated, in first person, non-enforcement of a broken law
when police responded to where I was hit by a motorist, I feel the same
about legislated morality. Bureaucracy attempts to create outcomes among
the otherwise disinterested or uninspired. These are individual attributes
that reflect well on larger populations when enough project them. It is a
failure by generalization to not expect the exception, a remnant habit from
when situational awareness and Mazlov's hierarchy framed my daily to-do
list.

Drivers don't avoid bicyclists because there are laws that say you'll get
in trouble. It is a pop quiz for the individual at the wheel, a brief one
question test that will demonstrate either their humanity, awareness and
necessity to express concern for another or the validation of their step
onto a slippery slope leading away from all that is good.

I like to think that for my years and miles of cycling, the places it has
taken me and the people I have met, that my personal statistical result is
that more people are good, right and just versus otherwise.

I can tell you it's safer to ride in downtown San Antonio than it is close
to my house in the countryside (nee, far burbs). Bikes queue with the cars
downtown, and some drivers go wild passing on blind twisties in the
country. (I signal drivers when it's safe or not safe to pass, and pull
over if they don't pass.) While I don't know of anyone being killed on my
creek-bottom road, there is a bike death every year downtown. That's all
about statistics. I hope not to be the one that catches up out here.

Marc, I spent a couple of weeks in Greenville since last fall. Notably
there are good bike routes - beautiful country - and quite a few bike

aggressive. Back to suburbs. The most dangerous areas are the shopping
zones, because drivers have their minds on their errands.

[RBW] Re: Coffee questions

2014-03-08 Thread Patrick Moore
More thanks and more questions.

Deacon: I tried the Stumptown method just now and, the coffee did not taste
sour, indeed it was very smooth, but weaker than what my Melita maker would
produce with the same amount (but finer) of grounds. Perhaps I should stir
it more than once, or perhaps I should let it steep a bit longer? Or use
more than the recommended 1 tbsp per cup?

I was pleased to see that the (good quality) blade grinder produced a
surprisingly uniform grind of crumb sized grounds.

Chris: thanks for the carefully worded and informative analysis. I’ve read
the Wikipedia article but it is not as informative as these replies. The SM
site is useful, particularly about bean quantities. So, sourness comes
“before” bitterness – indicating that I wasn’t steeping efficiently enough.

Garth: good advice and information on the Moka Pot; I’ve actually got a
nice one. I’ve found the brew too “cloudy” and strong, but perhaps I need
to be more careful about the ratio of grounds to water – expect I’ve been
using quite a bit more than 1 tbsp to 1 cup when, probably, I ought to use
a bit less.

Sorry, my press won’t break – insulated stainless steel.

Mike: what is the essential difference between the Chemex and the Melita? I
think part of my problem with various makers has been over extraction:
excessively fine grind and too much beans, with the Moka Pot in particular,
producing a heavy, cloudy brew that seemed more bitter than strong.

The Aeropress is interesting because it is fast and allows one to dilute to
taste after making. But of course, if I get the method and quantities right
with the other methods, that won’t be necessary.

Question: when “they” advise 1 tbsp to 1 cup, does that mean “rounded” tbsp
– ie, as much as will heap on without falling off? Or level? And, is this a
measure of ground coffee or whole beans?

Off to make my second big cup with the press, stirred, not shaken.

Thanks again all.

[RBW] Re: Coffee questions

2014-03-08 Thread Dave
I think in the same way that buying a repair stand revolutionized my
ability and interest to fix things on bikes, owning a scale, timer, and
burr grinder can revolutionize a relationship with coffee.

A scale that measures in grams is so useful because it allows for the easy
comparison of techniques relying on ratios. Water weighs 1 gram per
milliliter; I love my french press with 400 grams of water (ml) to 40 grams
of 'coarsely ground' fresh coffee beans. Coursely ground to me is similar
to comfortable walking sand at a beach.

In a kone dripper or other type of pourover, my preferred ratios change.
Same with a mokka pot, and certainly with an espresso machine. And this
is all with the same roast! Having access to so many different roasts from
so many different parts of the world will yield very different flavors if
all else stays the same.

I've mentioned the company Blue Bottle before, and regardless of your
interest in their beans, they've put together a great collection of brewing
method instructions: http://www.bluebottlecoffee.com/preparation-guides

[RBW] Re: Coffee questions

2014-03-08 Thread Daniel M
Just to point out: over-extraction does not result from too much (er, many)
coffee grounds being used. It's a combination of too few grounds / too much
water / too much extraction time.

I find that using a generous amount of very coarse grind with a slow pour-over
is a very forgiving method. Comes out strong, rich, and smooth.

Time to make coffee!

Just as much as a timer is important to have a precise brew time, a proper
scale is important to have precise coffee-water ratio.
Also, keep in mind that strong coffee flavor, has no real relation to
caffeine content. That aside, grind will definitely affect flavors that are
extracted.

As one who spectated, in first person, non-enforcement of a broken law when
police responded to where I was hit by a motorist, I feel the same about
legislated morality. Bureaucracy attempts to create outcomes among the
otherwise disinterested or uninspired. These are individual attributes that
reflect well on larger populations when enough project them. It is a failure
by generalization to not expect the exception, a remnant habit from when
situational awareness and Mazlov's hierarchy framed my daily to-do list.

Drivers don't avoid bicyclists because there are laws that say you'll get in
trouble. It is a pop quiz for the individual at the wheel, a brief one
question test that will demonstrate either their humanity, awareness and
necessity to express concern for another or the validation of their step onto
a slippery slope leading away from all that is good.

I like to think that for my years and miles of cycling, the places it has
taken me and the people I have met, that my personal statistical result is
that more people are good, right and just versus otherwise.

To a great extent, it is for the otherwise that laws are written. Sociopathy
is unfortunately widespread but for cyclists the bigger dangers are drivers who
are inattentive, distracted, intoxicated or just inept. Relatively few
car-bike collisions are intentional and quite frankly no law is going to deter
that, the behavior being driven by the rage of the moment, but at least the
laws might put those drivers behind bars where they can't run into any other
cyclists. That is of some value. The law might also- although is certainly
not guaranteed to- remove some of the inebriated and/or inept drivers from the
roads.

The safety of road users whether in motor vehicles, bicycles, other conveyances
or as pedestrians is in large part dependent on the quality and design of the
infrastructure. Roads which are too narrow, have impaired sight lines, poorly
designed intersections, poorly maintained surfaces, etc., all increase the risk
of crashes, injuries and deaths. For bicyclists in the south, you can also add
the epidemic of aggressive, uncontrolled dogs into the mix judging by the
Southern Tier tour reports I have read.

IIRC all of the eight states mentioned are taker states- e.g., they get
significantly more from the federal government in taxpayer dollars (shifted
from other states) than they pay in. Basically these are states whose
politicians have chosen to keep them poor and underserved in terms of public
investment and the public pays the cost of that. The problems facing
bicyclists are one set of examples of the deficits and costs incurred by such
policies.

True, but those things help a beginner, rather as indexing helps a tyro
cyclist. I no longer measure when I make bread (and I get very good results
just by feel alone), but when I started, I certainly needed a recipe.

As to the degree of obsession, I suppose I am half-way between don't
really care and spend a lot of time thinking about it.

This morning's experiment with the press gave coffee that, at least, was
not sour and that tasted good; but it was a bit weak for my taste. Brew #2
OTOH was a bit bitter -- I stirred more on the second pot. Will continue to
experiment.

[RBW] Re: Roadeo handles snow, hoodoos, Mt Lemmon hill climb...

2014-03-08 Thread reynoldslugs
Chris and Don,

I live in Sonoma County, was visiting Phoenix for some Cactus League R R,
so a few of us headed over to Tucson to enjoy Mt. Lemmon. Amazing is the
right word, all right - - the climate, the geology, the climb were all
spectacular. Since I'm out of shape, I started at Molino at limited the
climb to 6000' total, including that snow-covered push up Ski Run road to
the very top. We did the same ride on Monday and Thursday.

Not sure why I chose the Roadeo for this trip - - it's a great bike for
hill climbs - light and fun to ride. This particular bike has a pretty
light build - - a relatively new Campagnolo Record set-up (maybe 12 years
old), with Aksium wheels (with my preferred tires, Schwalbe Kojaks). This
wasn't really a ride that was demanding on the bike, just a basic road
right (albeit with 6k' in climbing), so the Roadeo was a nice, easy bike to
ride.

best,

Max

[RBW] Heron (from RBWWHQ) gets new life as 650b

2014-03-08 Thread reynoldslugs
Dear List,

Here's a note I just posted on iBob, it's about a frame I got from Grant a
number of years back. I'm very fond of the frame, as it's the reason I got
back into cycling after a hiatus of 12 or 13 years. I had fallen out of
biking for a number of years - - aluminum bikes and index shifting didn't
suit me too well - - then one night over a few beers the Right Reverend
Mookie Rex handed me a Rivendell Catalog, which led to the purchase of this
frame, a renewed interest in cycling, and many good times since.

Here is what I just posted on the Bob list:

With quite a bit of help from the list, this project is finally done:

http://www.flickr.com/photos/41563482@N06/sets/72157642068014924/http://www.google.com/url?q=http%3A%2F%2Fwww.flickr.com%2Fphotos%2F41563482%40N06%2Fsets%2F72157642068014924%2Fsa=Dsntz=1usg=AFQjCNF_clrg9dd2y8uOGxNHN8wF_i85Hw

It's an older Heron Road frame, just a bit of beausage. I got this bike
from Grant Peterson maybe 15 years ago. It was hanging in the garage, and
has a new life as a 650B. I haven't ridden it much, just around the
neighborhood, but I like the way it looks and feels.

Parts include the following:

Phil Hubs from the original build, now on Velo-Orange rims with Soma B-line
650x38s.
Sugino PX crankset in 26-40
Shimano Deore r/d
Suntour Superbe Pro f/d
Superbe Seatpost - 27.0
Nitto flat bars - these suckers are pretty heavy...
Selle Anatomica Titanico X for Clyde
Tektro Big Mouth
King Iris
Thin Gripsters

I'll take it out for some hills this week and will send along a ride
report.

thanks again -

I'd like to use Meisha's grips on my Hillborne but was curious about
brining them down very dark…but not amber.
Black or blackish would be preferable.
 thank you

[RBW] Re: Recommended Coffee Grinder

2014-03-08 Thread Kellie Stapleton
I use a lot of my backpacking stuff on my bike. Check this one out:

What coffee grinder do you recommend? Two uses:

It’s interesting. I’m discovering fresh swiss water decaf coffee well
brewed (which I learned how to do through this group — thank you!) helps my
brain in a way similar to the way dark chocolate does (we make our own to
get it dark enough without stuff that messes me up). So I’m planning on
making coffee on trips now, and there is a vast difference between fresh
found and even day old ground, which I can now taste because I am brewing
it well. And I don’t even have the Aeropress yet. Grin.

 With abandon,
 Patrick

Mike, I don't think anything wider than a 38 will work. It's pretty tight
at the chainstays, maybe 4-5 mm.

That's a great looking bike! I didn't realize the Herons had such nice lug
work, and the build looks great. Enjoy that shakedown ride!

[RBW] WTB Rear Cream Longboard

2014-03-08 Thread Edwin W
Cracked mine today, not sure how. It involved a broken spoke and my 7 year
old riding on my rear rack. I am sure all of those are connected, but not
sure how!
Anyone have a mismatched rear cream longboard lying around looking for a
mate?
You can contact me at dweendaddy at hotmail.

Maybe biking in the South is dangerous in more ways than I knew,

Edwin

You got it. I bought a new set to replace the front, so I have the rear
