Chad, I'm about your height and have owned both sizes of Clem H (and a 52 L). I 
think the sizing recommendations are skewed towards the stock completes which 
come with wa reachy-backy Bosco Bars. 

If I was buying today I would choose between two styles: Stock complete as a 
street bike; my own build as a trail bike with mtb-flattish bars. The 52 with 
reachy-backy and minimal clearance works for the street. 45 would be perfect as 
a mountain bike, and I'm not worried about tires; I just found some Schwalbe 
Black Jack knobbies for my XO-1. 

If you want a smaller/lower H that you can toss around in the dirt, I say throw 
some flatbars or original Bullmoose on there and have at it. Do it this weekend 
and get free shipping, too!

[RBW] FS: Rivendell Rosco Bubbe - Bronze

That is a very cool bike and build.  I love the Root Beer color, Bullmoose 
Bars, and 50mm Cazaderos!  I actually had one of these on pre-order to build up 
as a drop bar all-road/gravel bike, but cancelled it for whatever reason, I 
think it had to do with limited tire size and then finding a beautiful older, 
but near perfect condition Toyo AHH built up by Riv with higher end parts.  I 
seem to remember this Bosco as being advertised as more of a road bike with 
clearance for 38-40 tires. Dang, so many cool Rivs listed here lately in my 
size!  You folks aren’t helping but to enable my bike and parts hoarding habit 
LOL.

Wow!  Great deal.  I’ve been holding out for the small or medium Gus Boots to 
use as a MTB, but this offer is very tempting.  I bought my wife a used 52 Low 
a couple of years ago and while she never rode it, I used it for a while and 
loved how it road and it was a great fit.  I ended up trading it for an 
original ‘93 BStone XO-2.  The problem for me with the Clem H is that a 46 
seems too small and Riv recommends that I ride a 52.  Based on having owned a 
used 52 Bombadil, I am almost sure the 52 H would give me a similar minimal 
80ish SO that would be okay on light trails but borderline inappropriate for 
rough trail use with wide tires. I guess it would depend on what I used the 
Clem H for and should probably see what Riv recommends.  Before the Clem came 
out, Brian and Grant recommended I size down to 48 650B Bomba or 50 
Hunqapillar, but new ones are semi-custom and way out of my price range LOL.  I 
am sure a 46 Clem L would work fine for me, but it is too bad they don’t offer 
it in a 48-50 650B.  I’ve got several old 26” MTB’s and a ‘93 XO-2, but prefer 
650B on a new bike as good 26” knobbies are getting ever harder to find each 
year.  Does anyone here with about an 80PBH have experience riding a 46 or 52 
Clem High?  I am roughly 5’6” with what seems to be a longer than average PBH 
for my size.

Yep, just like it sounds. Here is what Grant Peterson says in his latest 
Blahg (emphasis in bold added). If I didn't have one, I'd get one. Act now!

and every length stem what comes from the forge.

I have an irrational desire to like Albas, but they've never worked out 
long-term on any build.

I agree with joe. In my experience, the albatross bars take some geometry 
consideration to get to work. I’ve also used them on bikes with too short a top 
tube and felt cramped and twitchy. I’ve also used them on bikes where they felt 
pretty good only to wreck my hands very quickly on hour 3 of riding. I’ve had 
them on bikes with tires from 28-55mm, but I don’t use them at all anymore. 

So I’d question the relationship of the bars to the tires as well.

I think the Riv Road should be about right for me as a road bike. It's a 54
cm frame, I don't have exact top tube and seat tube lengths right now. My
PBH is ~79 cm, I have had a 54 cm Romulus and a 54 cm Rambouillet in the
past, and they felt about right. I have it set up quite upright right now,
but it doesn't feel cramped. I haven't tried it with drop bars, I think it
should work well.

I'm going to NAHBS tomorrow, hope to be able to talk to the RIV staff there
about what would work for me and what would be the right size.

In my experience, there is no substitute for getting freshly roasted beans 
and drinking them within 2-3 weeks, at most.   I've stored beans in good 
quality canisters and they go stale just as quickly as beans stored in a 
typical bag.  i think once they are exposed to the atmosphere, the clock 
starts ticking.  I don't think there is a way around it.

that way (including an AHH) and it just doesn't work. Even with a 13cm stem the 
bars still create an almost vertical seating position, which makes the bike 
twitchy and cramped. I don't have advice on what you should keep or buy, but I 
suspect your problem with the Road is more than tires.

“Bad” depends on if you care about what is lost by storage. My experience is 
that oils and a slurry of intangible things we’re just starting to understand 
that I lump together and call, perhaps inaccurately, flavinoids. These oils and 
flavinoids stimulate my brain in a very good and noticible and not jittery way. 
Not just the caffeine. All of it. Together. Beyond two week, and I notice a 
decline in this, which is also reflected in a loss of flavor (hense the term 
flavinoids, because the flavores of fresh good food have a lot of them and we 
taste the difference, whatever they all are). Chocolate, hot and curry spices, 
garlic, saturated fats, fish fats, tobacco ... I forget what else, are high in 
flavinoids.

2. Is the problem the 3 months or the freezer?
Time, definately. I suspect the freezer change, as with all foods, also harms 
oils and flavinoids, though as you point out it also hardens the bean, 
compensating somewhat for loss of flavor/flavinoids by a more consistant brew 
if pulverized instead of ground.

3. Is there a way to store 3 months of roasted whole beans so that they don't

Yes, and there are places that sell specific versions of this for that: Sweet 
Marias, but they seem to be out of most of their roasting supplies.

Green beans generally cost half the per pound price of roasted. But this is 
somewhat mitigated by the green beans having more moisture (lost in roasting), 
so total yield of a pound of green beans roasted is 3/4 pound, perhaps. We 
don’t weigh. Other advantages are the experience of roasting, learning and 
experimenting and learning what you like because you can try one bean type 
roasted differently, aged 1-14 days, the better flavor and flavinoids as I’ve 
already mentioned.

7. If one buys green beans, how best to store them, and for how long, and how 
best to store -- freezer? Fridge? St Steel container in dark pantry with tight 
lid?
We store them in the bags they come in from Dean’s beans (coated paper), in our 
pantry. Last for 6 months, with a mellowing of flavore that begins around two 
months. Protect from changes in moisture and exposure to light are the only 
requirements I’ve read for green beans.

8. Add other apothegms as appropriate.
Roast your own for the most afore your beans give up the flavinoid ghost! Grin.

Keith, I can assure you that the AHH will feel way closer to a Roadeo than
a Disc Trucker.  I had a Surly Pacer, which is supposed to be a faster road
bike compared to the Long Haul Trucker, but it still felt like a tank
compared to my AHH.  My Roadeo is no doubt more sprightly than the AHH, but
it is close.  The AHH is one bike that I have that I am confident can do
everything.  I have ridden club rides, gone on a 600k Rando ride, ridden on
fire roads and single track, and carried 30 lb loads in rear panniers.  The
Ram is no doubt a nice bike, but unless you are committed to converting to
650b to allow wider tires, I would definitely go with the AHH instead.  I
love the versatility of the AHH and would recommend it for anyone, so I
would go that route.

Regarding buying so much coffee that have to store some for three months:
Here in NYC, many of us know that there are few stellar pizzas in the
city. Probably more than most of us know, but you find out via
friends, Internet, whatever, and they're AMAZING. But any slice of NYC
pizza (barring the chain stores like Papa John's, etc.) is pretty
good. It hits the spot. It's not great, but it's a lot better than no
pizza at all. It was made fresh, the dough was made with Type 00
flour, etc.
With coffee, if you're a cup o' joe kind of person, using it for fuel
in the morning, just looking for that boost that tastes pretty good,
then you might not find much difference between Peet's and the stuff
that was just roasted a few days ago. It's like most NYC pizza. But
you might find that you bought some coffee that was just roasted, you
bring it home and grind a cup's worth right away, you brew it in a
reproducible way, and WOW that's AMAZING! Not just good, but great.
That's what happened to me. A workmate brought me a bag of beans she
had picked up from a roaster on her way to our office as a gift. I
made some as soon as I got home and never looked back.
I'm lucky enough in Brooklyn to be able to get, within a 10 minute
walk, Stumptown, Café Grumpy, and a few other freshly-roasted beans.
They're not all my cup of coffee, but when I find the ones I like, I
can always get them.

[RBW] Enable my bicycle buying issues!

Hi all,
I've been feeling an itch for a new bicycle, or at least a frame to tinker
with, but I'm kind of stuck. A bit about the current stable: A Lynskey S
coupled Ti all-rounder, that will clear tires up to 42 mm. It has a carbon
disc brake fork, and cantilever rear brakes. This was intended as my
do-it-all, lifetime bike, but I neglected to account for my enjoyment of
bike buying and tinkering. A Surly Disc Trucker, for long, self-supported
tours. A full-suspension, 27.5 Scott mtb. A Bridgestone XO-3 with a Bafang
mid-drive motor kit retrofitted. Last, but not least, a circa ~1995 54 cm
Rivendell Road Standard that I bought as a frame and built up with
light-ish components and Albatross bars.

The Rivendell has never been that comfortable with the Albatross bars,
likely due to the Ruffy Tuffy tires. I think I haven't really enjoyed the
benefit of the Albatross bars, and they may work better for me on a bike
with bigger tires than the Road Standard can take.The other downside of it
is that the paint is kind of rough, and there are no cream accents. I've
been on the fence about where I go next. I could repaint the Road Standard,
and get the cream accents added. I could buy a used Rivendell bike/frame,
likely a Rambouillet. Or, I could buy a new Rivendell frame, likely an A.
Homer Hilsen. I'm a little concerned that the new Rivendells may be
heavier-built than I really need or want, given that I already have the
Disc Trucker. The Roadini may be a little more what O would want, but I'd
really like any new Riv I get to be fully lugged.

Short version: Should I re-paint my classic Road Standard frame, buy a used
Rambouillet frame, or buy a new A. Homer Hilsen frame?

[RBW] Crust Towel Rack Drops on Your Riv? Which stem are you using?

I have a Crust Towel Rack that I am planning on installing on my Appaloosa 
tomorrow if I can figure out where I put my brake levers. When I ride it some I 
will let you know how it is. 

I’m planning on a short stem for this, an 8cm dirt drop...if I had something 
shorter on hand I would go with that. The real issue is that the reach on the 
Appaloosa is a bit long for drops, and I’m not a flexible long torso kind of 
dude, so I need to get them a bit closer and higher than I normally would. 

It’s a wide bar that seems to be well made, so I’m excited  to try it out.  I 
may not like it though, and if not I’ll go back to the bullmoose bars and maybe 
try to fit the crust bars on my Niner.

Roasting your own beans in a popcorn popper is very easy, although 
depending on the popper, you may have to improvise to keep beans from 
shooting out the top.   It is a very fine line between "roasted" and 
"charred" in a popper so you have to be very diligent.  


Trader Joe's has specialty, small batch coffees (I believe the only ones 
where beans are in a bag, rather than a can) where they buy an entire crop 
and sell it until supplies run out, which seems to be just a few weeks.  I 
always buy them when I see a new one and they have ranged from good to 
excellent.   Much better than their regular coffee bean selection.

This or a related study was what made me keep my beans in the freezer, and
I *think* I've noticed a change for the better in flavor. What appears to
happen if you freeze them is that, at least using a blade grinder
(whacker), the particles are more uniform in size -- noticed this with
coarse grind for the press.

Aside: Tried a few drops of H2O in this morning's 2-scoops of (frozen)
beans, and yes, it kept the dust and static down. Had to scoop last bits
off of wall of grinder cup, but far less mess than dust flying all over.

Y'all's word for the day: Pulverulent, adj, as in "effing pulverulent mess,
dammit!"

FYI - I spoke with Rick at D (over email; he is actually quite 
responsive). He reported the following regarding a Rambouillet restoration:

*"A single color with cream head tube and cream accents runs $545 plus 
shipping. As far as the frame repair we do that as well, probably around 
45$ to fix the damage and $60 to move the cable stops further below the top 
tube. We do have a limited supply of Rambo decals in stock. *

*As far as color choices, RAL will work and Pantone will work as well - 
just keep in mind Pantone is an ink not a paint, so the shades are not as 
close to the real thing. We also use the DuPont fleet color book. We are 
also very familiar with all the colors Rivendell uses. *

*Turnaround is around 5-6 weeks."*

Given their Riv experience, I might actually go this route.

Darin, I am indeed having some issues with tire seating. I have heard many
people say using two rim strips helps. I will probably try that.

Trader Joes had a really good Ethiopian Honey Process coffee that was like 
$6 a can. I should've bought 10 of those. I haven't seen them in any around 
me. Their winter blend is also really good for the price.

Ceremony Coffee has to be one of my favorites.

Onyx is also good but pricier, however, they commit to paying much more 
above market price to ensure their farms keep operating.

BODUM BISTRO - i recommended our office get this when they told me their

Mark: Hehe, yeah, I had to do some bike selling on this end and parts dropping 
on theirs (I'm using some of my stash) to get the purchase done, but I just had 
to have it. Atlantis is one of the few Rivs I've never owned, and all that 
black/gold stuff going on with the wheels, brakes, fenders and racks...it's too 
much! Add the cool bars/stem and shifters and I'm all the way in. I can't wait!

popper.

looking to do the same- put some drop bars (not necessarily the towel rack) on

least I haven't seen any here or on the Instagrambook. I have this coming next 
week which kinda mimics what you're looking to do: Flared drops on a shorty 
stem to make a Riv frame commonly spec'd with pullbacks work. I'll letcha know 
what I think soon, stay tuned!

The temperature gun has a laser, and it reads the temperature within a 
second. I use it to know when I'm about to hit the first crack, so I can 
crank up the heat and back off once I get a rolling crack. I try to roast 
light

I just hold the roaster still for a second. The temperature gun is laser,

Thanks, I was hoping some RBW owner was riding the Crust bars, maybe on 
their Atlantis or Hunq or something, and had found a stem they really liked.

For me, the new & improved Analog stems are still more of a "fingers 
crossed" option. 

I'm on the Analog "stem news updates" email list for the next run of 
w(Right) stems. James of Analog said the next run of Analog w(Right) stems 
will be Taiwan-made, and 31.8mm only with a 4 bolt face plate, plus other 
improvements, so I'll need a shim to use this new version of the stem. But 
they have yet to get through the prototype and testing phase, let alone 
production and shipping.

After building and riding many bikes that have been cheaper Rivendell inspired 
builds, I was able to buy my first Riv last summer. A 57cm Bleriot. 
Unfortunately I bought it at a time when biking and bike tinkering were mostly 
at a halt due to having a second child and buying our first home. So things 
have finally slowed down a bit and I was able to build it up.

I took it on a test ride around the neighborhood yesterday. Some minor tweaks 
to be made, but it felt really good.

With two purchases of heirloom quality goods, you can buy beans up to six 
months (though 2 is preferable) at a time at the same price for coffee beans as 
you pay now per pound (roughly $5-6 a pound before shipping), and have the 
best, smoothest, most remarkable coffee in the world (tied with the rest of us 
who do this. Grin.). The difference will likely astonish you. If you are asking 
questions about freezing or not freezing, you may as well experience the full 
answer, so at the very least you know what you are missing. Grin. Next time we 
are able to meet and ride, I’ll give you a taster. Grin.

1. Zen Roaster. I didn’t wax on about this roaster much above, but it is made 
by a multiple generational ceramic craft family in Japan and it shows. It is 
stunning ceramic. We bought a second one to have as a spare should something 
happen to the first, but it just shrugs off bumps and dings with our cast iron 
stove grill and other pots. Haven’t dropped it on the floor though, but 
wouldn’t be surprised if it shrugged that off too. It is the very definition of 
beausage, becoming a lustrious black inside from the bean roasting, and like a 
speckled egg on the outside from the chafe bits occationally flairing up on it. 
You’d likely spend 20 minutes total roasting once to twice a week to have fresh 
roasted beans daily. (best used between 4 hours and two weeks, though the sweet 
spot most people love is somewhere in the first week). 

2. Quality hand grinder. There is beauty in a well crafted human powered tool 
and in using it. It is a richer, fuller experience to feel the texture of the 
beans grind. Did you know you can feel the roast level by the bean grind?

As a long-time (22 years?) member of the very much related Boblist and a
Rivendell customer since 1994, I've long participated in convoluted
discussions about the merits and demerits of this or that bicycle or part
or accessory, but always very much in male mode. It's very interesting  to
hear similar discussions in female mode. Refreshingly different!

I knock my blade grinder all over the place and nope, I get fine coffee
grit over a 2 sq ft area; that's my problem. I'm intrigued by the "couple
of drops of water" trick and will try that; I guess you have to cut the
amount of water fine so that you don't end up with mud?

I understand the advice to buy small quantities of good quality beans from
purveyors who sell them fresh, and use them up quickly, but one advantage
of being in practice if not in principle car free (apart from rare out of
town trips I drive perhaps 800 miles per year, now that my daughter can
drive herself -- I just live a dull life) is that I tend to stock up on
essentials at Costco once very 6 or 8 weeks, which means bulk, like the 3
lb bag of San Francisco French Roast beans that I mentioned; and these
obviously must be frozen -- right?

Also, I very often drink tea (strong breakfast teas), which means that I
generally drink coffee at the equivalent of every other day, with a daily
ratio usually of 2 ~18 oz cups -- meaning that 3 lb bags last even longer.

At any rate, now I understand more clearly the variables and the options
and the benefits and deficits, so thanks again to all. Will continue to
ponder and, eventually, make a decision.
