I'll experiment a bit with a macro for this. I'm back when done, if nobody
beats me to it.
r write a macro that replaces all date cell's formulas with their values
automatically and run it before saving your spreadsheet. Or maybe let the
same macro also save the spreadsheet and use that macro instead of Ctrl+s
for saving.

t easily use them for further calculations. For instance, in
A3, type (for a result with 8 decimals):
=ROUND(A1*24;8) & ", " & ROUND(B1*24;8)
or, if you want to use the values in A2 and B2:
=ROUND(A2;8) & ", " & ROUND(B2;8)
Result (in my case):
42,9867, 0,086

replace the O in my example with whatever means East.
Same goes for North and South, of course. A negative number means south, a
positive number means north. Replace the N in my example with whatever
means North in your language.

;″N"
Or, if a period is used for decimals in your language:
[TT]"°"MM"′"SS.00"″O"
[TT]"°"MM"′"SS.00"″N"
Result in my case, after inputting 0:5:15,53 and 42:48:12,8:
00°05′12,53″O 42°58′12,80″N
42,9702°, 0,08681389°

If I set the language to US English, it will display:
Sunday 27
Why not Monday, you might ask? Because 27 December 2020 was a Sunday.

If you want 2020-12-27 to be a Monday, then no. Otherwise, see above.

Maybe there's a macro active in that document that makes that happen that
can't be run in LibreOffice Calc?

Ooops, did it again, I sent to the poster instead of the group.
Here it is for the group only.
My apologies.

The last one returns an integer. If you want to use the first one to return
an integer, just modify it like this:
=INT(NOW()-DATE(YEAR(NOW());1;1)+1)

Strange. Mine wraps as expected. LibreOffice 7.0.4, on Manjaro Linux 20.2.1.
Maybe a bug in 6.2.8.2 that has been fixed now?
