Yes, using the Notes app is a great way to get used to typing on the phone. If you do not have enough vision to see the screen, do not by the APH talking Typer program. It is really designed for a bluetooth keyboard and the exercises do not tell you the punctuation marks that are expected, so

Once you have a default voice, you can go to the rotor settings, under languages, and add other voices that will be an option on the rotor under language. So, if you have Samantha as your default voice, you could add any other voice to the rotor language options even if it is the same language.

Yes, you can have multiple voices downloaded to your phone at the same time. To delete a voice you do not want any longer, just double tap on the voice, then on that screen, once you are on the name of the voice, just flick up or down with one finger until you get to delete and double tap.
