Since you said you tried the gmail app I assume you use gmail in which case you should be able to specify whether your messages are deleted on the server when you delete on your phone or not. I am not a gamil user, but I think you may have to go to Mail settings on your iPhone, then double tap

I have been quite happy with the Mail app up and tell the most recent iteration on iOS 10. So I have the same question. I'm fine with deleting the app sending it to the trash forever and ever and ever. But I'm looking for something that's a little bit more efficient and consistent.
