This sounds like a great idea.  I'd love to help.  Only bummer is
I have to work 1-5 on saturdays at the math dept's linux lab.  (Yeah, poor
me, being paid to work with the OS I love, heh heh).  I have a 16 port 
10Mbps hub I can bring in, and I _think_ I have a 50 foot orange power
cable around somwhere (the ones you plug power tools into :-) ).  Oh well,
I could help set up and then take down if it went from 12-6.
        How about we have two Now That You've Installed It seminars, one
say 6-9 on that Sat and then again 12-4 in the same room on Sunday.  That
will give people enough of an intro to get their feet wet Sat night and
then come back with questions sunday.  
        One thing we might want to do is make up a little flyer to give to
everybody listing linux websites, mailing lists, local LUGs, etc to point
them at more info.  Book recommendations wouldn't hurt (in my case at
least the right book made all the difference).  Things like that.
