Thanks Suresh A biryani recipe from the southern tip of India. Its a great marker. I can see this thread developing into a huge database :-)
I like the look of this recipe. seems easy to make as it is a very serial process apart from the pre-cooked mutton. Also interesting to come across something new. The spice Kalpasi which is evidentially a popular Chettinad spice seems to be one of the factors that make this recipe distinctive I'm guessing its available here in Bangalore ? . (from Wikipedia ) "Kalpasi also known as "Black Stone Flower" is a rare dried flower used often as an Indian spice in Chettinad. Its latin name is Didymocarpus Pedicellatus, in the family Gesneriaceae. Some of the other names for it include Shaileyam in Sanskrit / Gokshura, Jeevanti in Hindi, Kallupachi in Telugu." Hopefully this weekend i can post my next biryani project cheers On Mon, Feb 21, 2011 at 8:26 PM, Suresh Ramasubramanian <[email protected]>wrote: Nagercoil Mutton Biryani. > http://www.youtube.com/watch?v=kGmZjWWmfIk&feature=relmfu >
