Also, it will drive off volatiles that might be in the water which have boiling points below 100C. They'd boil off, condense in the distiller and go right back into your product if you didn't vent them to the air first. Another way to do the same thing is to simply discard the first part of the batch which would contain the volatiles and use the rest. Thanks, sol. Mike D.
