Harold, I can purchase sodium ascorbate in bulk, that is labeled "100% Pure Buffered Vit C Sodium Ascorbate, corn, yeast, sugar free pH 7.1. Would you or anyone else in the group know of a reason, I could skip adding the bicarb and just start with sodium ascorbate, vs citric acid?
I'm a big confused on when a person would want citric acid vs ascorbate. In my last four brews I had two with very slight traces of Leci. floating on top.These seemed to be from larger sized granules. When I measure the Lecithin I do notice that the size of the granules do vary.If I had a precise scale I would try doing it by weight, just to see. Harold
