## Following a discussion on Ph here recently I am observing one batch at the 
moment, a one litre batch I produced on Oct 7.  I intend to do more to verify 
the below results over time.
Ph of DW straight from the bottle, and after waiting several minutes for meter 
to read constant = 6.9On completion of brewing = 10.2Oct 7 = 10.4  Fluctuating 
between .3 and .4 but remaining steady at .4Oct 14 = 10.4 Same as above

Ph is the concentration of Hydrogen ions in water I believe?  Is it not so that 
the brewing process affects the Oxygen/Hydrogen ratio of the water, thus 
releasing Oxygen leaving more Hydrogen in the water, hence the Ph will become 
more alkaline?
