I have 2 mail servers - SIMS and AMS. Either of these can receive mail if they are the only one running.You can only have one server listening on port 25 (SMTP) on any given IP. You need 2 IPs and the servers need to listen on their respective IPs. Give SIMS the "outside" (routable) IP and run AMS on an "internal" (private, non-routable) IP in the 192.168.x.x or 10.x.x.x block. Have SIMS forward to AMS.
