This is relatively straightforward. For each student account, simply enable
the 'Mirror To' feature and put the admin account in the mirror list.

AFAIK, there's no way to do this directly with SIMS. You _might_ be able to
have a third-party script or app snag copies of messages from SIMS' queue
folder, but that could be hit-or-miss if SIMS sends and dequeues message
before the script can copy them.
